The Department of Agriculture Western Visayas Filipino Food Month Cooking Olympics recently concluded with Ibos sa Isla and Guimaras Mango Pasta emerging as the winners.
The Ibos sa Isla, a traditional Filipino delicacy made of glutinous rice and coconut milk wrapped in banana leaves, won the hearts and taste buds of the judges with its unique blend of flavors that come with a syrup of tablea chocolate.
Meanwhile, Guimaras Mango Pasta, a modern twist on a classic Italian dish, features fresh mangoes from the island of Guimaras, which are known for their sweet and juicy flavor. Tossing pasta in a creamy sauce made with coconut milk, ginger, lemon juice, and oyster mushroom impressed the judges with its innovative take on traditional Filipino ingredients.
Both dishes are the creation of Ms. Maria Daisy Nable from the province of Guimaras. She impressed the judges with her unique flavors and creative use of local ingredients. Her ability to elevate Filipino cuisine’s diversity and traditional dishes to new heights was her edge over other contestants.
Filipino cuisine has gained recognition worldwide in recent years thanks to its bold flavors, diverse ingredients, and rich cultural heritage. From adobo to sinigang to lechon, Filipino dishes have become a favorite among foodies and culinary enthusiasts worldwide. The Filipino Food Month Cooking Olympics is one of many events held throughout April to celebrate Filipino food and culture.###By Maria Corazon M. Buala
